the decaffeination process starts with the production of ethyl acetate, which is naturally derived through the fermentation of sugarcane. the greens then soak in a solution of water & ethyl acetate, which bonds with the caffeine molecules. as the ethyl acetate solution is flushed & replaced, it pulls the caffeine from the beans, leaving the flavor intact. this process is repeated until the caffeine content is reduced to 97% or lower. finally, the coffee is steamed to remove any residual ethyl acetate, ensuring that no trace of the compound remains in the beans.
