We searched long and hard to find a decaffeinated coffee that could stand with our single origin selections. This organic decaf from Mexico is mountain water processed, and we slow roast it to preserve sweetness for a full-flavored cup.
Mountain water processed coffee starts with green coffee beans being soaked in hot water to expand the coffee’s pores, making the soluble components, including caffeine, more easily extractable. The beans are then soaked in a blend of water and coffee solids that dilute the caffeine through subsequent soakings until all of the caffeine is removed.
The benefit of this process is that much of the coffee flavor is retained without the addition of chemicals or other components that taint the flavor.
